Moisture is one of the quickest ways to reduce quality. Excess condensation softens leaves and shortens shelf life. This is why at Goldfarm we place desiccant pads in the bottom of every container. It is one small step we can take that demonstrates an outsized result. Beyond simply keeping the containers in your cooler or refrigerator, we recommend storing them upside down - this way, as the microgreens generate condensation, the moisture rises into the desiccant pad, instead of pooling on the underside of the lid and dripping onto the product.
Handled With Restraint
Delicate by nature, microgreens benefit from minimal handling. Keeping them in their original packaging helps protect their structure and reduces stress on the leaves. In fact, besides excess moisture, the next biggest culprit when it comes to wilted microgreens is airflow. For this reason, it is imperative to keep containers sealed at all times when they are not actively being used.
In refined kitchens, this restraint supports consistency and presentation, and helps to reduce wastage.
An Important Exception: Basil Microgreens
Unlike most varieties, basil microgreens are sensitive to cold.
They are best stored at cool room temperature, away from direct light and heat. At the most, you could consider keeping them in a wine fridge if this is accessible. This preserves their aroma, colour, and texture, ensuring they deliver their full character on the plate.
